Gobi Paratha

Ingredients
For The Dough :
- 1 1/2 cups whole wheat flour (gehun ka atta)
- 1 tsp oil
- salt to taste
- 1 1/2 cups grated cauliflower
- 2 tsp oil
- 1/2 tsp cumin seeds (jeera)
- 1/2 cup finely chopped onions
- 1 tsp finely chopped green chillies
- 1/4 cup finely chopped coriander (dhania)
- 2 tsp oil
- salt to taste
Directions
- Mix wheat flour, salt and water to make a semi-soft dough. Keep aside.
- Heat the oil in a broad non-stick pan and add the cumin seeds.
- When the cumin seeds crackle, add the onions and green chillies and sauté on a medium flame for 30 seconds.
- Add the grated cauliflower and salt and sauté on a medium flame for 1 to 2 minutes.
- Add 4 tbsp of water, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
- Add the coriander and mix well (you can also add grated paneer at this point to make gobi paneer paratha) . Keep aside.
- Divide the gobi stuffing into 5 equal portions. Keep aside.
- Divide the dough into 5 equal portions.
- Roll roti and stuff gobi stuffing and roll.
- Cook the paratha on a tava (griddle), using a little ghee until both sides are golden brown.
- Repeat with the remaining dough and filling to make more parathas.
- Serve hot with Yogurt or chutney or pickle and Enjoy!!.
